As it usually is, this week has been full of information and learning! The weeks have been flying by and the students are doing everything they can to stay on top of the readings on top of everything else they are trying to do! Justin will tell you about what we went over this week.
“Well Class 32, we have made it through week 3! What a busy and yet very productive week! This week we have focused on a little of all our subjects. A lot of homework, but we are continuing to strive for success.
In supervision, we focused on how to facilitate employees and their work performance. Topics in this chapter included things like communicating in many different ways, different styles of coaching and progressive discipline procedures. As I myself have been a manager before, I know these are very crucial pieces in managing employees and using unique styles based on the employee can have different effects on work performance.
In controlling foodservice costs, we focused more on the basic fundamentals of costs, ranging from budgeting and forecasting- which is an integral part of the planning process, but also can be one of the most difficult in running a business.
In management, we learn some of the same things as supervision, but in this subject this week, it was more focused on employee retention and the specifics on how to proceed with a termination.
Last but not least, and one of the most important subjects, ServSafe. This week we discussed inspection of food being received from a shipment, the basic temperatures to safely keep food frozen, cold or cooked, and when it is time to properly dispose of food once it enters the danger zone. Also, we learned how to document and label deliveries when you receive food and when it needs to be used by.
All these subjects are just a few of many things we learned this week. We are retaining so much and have progressed so far- keep up the good work classmates!
